Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette
Another amazing asparagus recipe...with garlic toast and balsamic vinaigrette...hmmm delicious !
GRILLED ASPARAGUS RECIPE INGREDIENTS
* 1 medium head garlic, unpeeled
* 5 tablespoons extra virgin olive oil, divided
* salt and pepper to taste
* 2 tablespoons minced shallot
* 1 1/2 teaspoons balsamic vinegar
* 1/2 teaspoon red wine vinegar
* 1 1/2 pounds thick stemmed asparagus
* 4 slices sourdough bread
GRILLED ASPARAGUS RECIPE INSTRUCTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Coat the head of garlic with 1 tablespoon olive oil, salt, and pepper. Place on a baking sheet, and roast 45 minutes in the preheated oven, until golden brown. Once the garlic is roasted, cut the head in half horizontally, exposing all the cloves. Squeeze both halves into a bowl, discarding
any skin. Whisk in 2 tablespoons of olive oil, salt, and pepper. Set aside.
3. While the garlic is roasting, place the minced shallot in a bowl with the balsamic and red wine vinegars for about 30 minutes to let the flavors blend. Whisk in remaining olive oil, and season with salt and pepper. Place asparagus spears in the mixture until ready to grill.
4. Preheat grill for medium-high heat.
5. Place asparagus in a large skillet or directly on the grill. Grill the asparagus, turning over once, until tender, about 10 minutes. While asparagus is grilling, spread the roasted garlic mixture on the bread. Grill bread until toasted. Arrange the bread and asparagus on a plate, and
drizzle with the remaining shallot and vinegar mixture. The grilled asparagus recipe with garlic toast and vinaigrette is ready to serve ....enjoy !

ASPARAGUS RECIPE INGREDIENTS
* 1 1/2 pounds fresh asparagus, trimmed and cut into thirds
* 2 medium yellow bell peppers, seeded and diced
* 1/4 cup olive oil
* 1 large red onion, cut into strips
* 1/4 cup toasted almond slices
* 1/2 cup grated Parmesan cheese
* 1/2 cup olive oil
* 3 tablespoons Dijon mustard
* 3 cloves garlic, minced
* 2 teaspoons lime juice
* 2 teaspoons sugar
* 1 teaspoon hot sauce
* salad seasoning mix to taste
ASPARAGUS RECIPE INSTRUCTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Arrange the asparagus spears and bell peppers in a single layer on the baking sheet, and drizzle or mist with 1/4 cup of olive oil.
2. Roast 8 to 10 minutes in the preheated oven, or until tender, turning occasionally to prevent burning. Remove from heat, and cool completely.
3. In a bowl, toss together the asparagus, bell peppers, onion, almond slices, and Parmesan cheese.
4. In a separate bowl, mix the 1/2 cup olive oil, Dijon mustard, garlic, lime juice, sugar, hot sauce, and salad seasoning. Pour over the salad, and toss to coat....wow amazing taste of asparagus salad...enjoy !

Ham Asparagus Fettuccine

ASPARAGUS RECIPE INGREDIENTS
* 12 ounces dry fettuccini noodles
* 8 ounces fresh asparagus, trimmed and cut into 2 inch pieces
* 1/2 cup butter
* 2 cups heavy cream
* 3/4 cup grated Parmesan cheese
* 1/4 teaspoon garlic powder
* 1/4 teaspoon ground black pepper
* 1 pinch cayenne pepper
* 1/2 pound cooked ham, diced
ASPARAGUS RECIPE INSTRUCTIONS
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Stir asparagus into pot in the last five minutes of cooking; drain.
2. While pasta is cooking, heat butter and cream in a medium saucepan over medium heat. When mixture begins to bubble, stir in Parmesan, garlic powder, pepper and cayenne.
Continue cooking until mixture thickens, stirring occasionally. Stir in ham and heat through.
3. Toss pasta and asparagus with sauce and serve immediately.

Bacon Asparagus Pizza
BACON ASPARAGUS PIZZA RECIPE

ASPARAGUS RECIPE INGREDIENTS
* 5 thick slices bacon, cut into 1 inch pieces
* 1 unbaked pizza crust
* 1 pound shredded mozzarella cheese
* 1 cup chopped fresh asparagus
* 1 cup halved cherry or grape tomatoes
* 1 (11 ounce) log fresh chevre (goat cheese)
* 1 teaspoon red pepper flakes
* freshly ground black pepper to taste
ASPARAGUS RECIPE INSTRUCTIONS
1. Preheat the oven to 375 degrees F (190 degrees C).
2. Place bacon in a skillet over medium-high heat. Cook for a few minutes to release most of the grease, but do not cook until crisp. Remove to paper towels to drain.
3. Spread the pizza crust out on a pizza pan or large baking sheet. Top with mozzarella cheese, bacon pieces, asparagus, and tomatoes. Dot with goat cheese, then season with red pepper flakes and black pepper.
4. Bake for 15 to 20 minutes in the preheated oven, until the crust is golden brown underneath when you lift it up to take a peek. Let cool for about 5 minutes before slicing and serving....hmmm nice tasting asparagus pizza...!

ASPARAGUS RECIPE INGREDIENTS
* 16 fresh asparagus spears
* 16 slices sandwich bread, crusts removed
* 1 (8 ounce) package cream cheese, softened
* 8 bacon strips, cooked and crumbled
* 2 tablespoons minced fresh chives
* 1/4 cup butter or margarine, melted
* 3 tablespoons grated Parmesan cheese
ASPARAGUS RECIPE INSTRUCTIONS
1. Place asparagus in a skillet with a small amount of water; cook until crisp and tender, about 6-8 minutes. Drain and set aside.
2. Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. Cut roll-ups in half. Bake at 400 degrees F for 10-12 minutes or until lightly browned.

Ham and Asparagus Crepes With Parmesan Cheese
Asparagus Recipe Ingredients:
* Crepes
* 2 large eggs
* 3/4 cup milk
* 1/2 cup all-purpose flour
* 2 tablespoons melted butter
* 1/2 teaspoon salt
* 1/2 teaspoon Cajun seasoning or paprika, for color
Filling
* 1 tablespoon olive oil
* 1 to 1 1/2 cups diced or thinly sliced ham
* 18 to 24 spears of asparagus
* Salt and freshly ground black pepper
Sauce
* 3 tablespoons unsalted butter
* 1/4 cup finely chopped onion
* 1 clove garlic, minced
* 2 tablespoons finely chopped red bell pepper, optional
* 2 tablespoons flour
* 1 1/2 cups milk
* 1/2 teaspoon salt
* 1/8 teaspoon freshly ground black pepper
* 2 teaspoons fresh chopped parsley
* 1 cup fresh shredded Parmesan cheese, or about 1/2 cup if finely grated
* More Parmesan cheese for topping
Asparagus Recipe Instructions:
Crepes:
In a blender, combine the 2 eggs, 3/4 cup milk, 1/2 cup flour, 2 tablespoonsmelted butter, 1/2 teaspoon salt, and Cajun seasoning or paprika, if using. Blend until smooth. Refrigerate for at least 1 hour or overnight.
Filling:
Cut ham into small dice or slice thinly.
Heat oven to 500°.
Toss asparagus with olive oil or olive oil with fresh lemon to coat thoroughly. Arrange in a single layer in a shallow baking dish; roast for 10 minutes. Remove and let the spears cool.
Sauce:
In a medium saucepan, saute the onion in 3 tablespoons of butter until tender. Add the garlic and chopped red bell pepper and saute for 1 minute longer. Stir in flour until blended. Gradually add the milk, stirring constantly. Add 1/2 teaspoon salt, the pepper, parsley, and the shredded Parmesan cheese. Continue cooking, stirring, until thickened.
Grease a 13x9-inch baking dish. Heat oven to 350°.
Place a crepe on a plate. Arrange ham and 3 to 4 spears of asparagus on the center of the crepe. Spoon about 2 tablespoons of sauce over the ham and asparagus; roll up or fold as desired. Arrange in the prepared baking dish; pour remaining sauce over the filled crepes. Sprinkle with more shredded Parmesan cheese. Bake until hot and bubbly.
Serve with tossed salad.

* 2 tablespoons finely chopped red or sweet onion
* 1 pound asparagus, trimmed, sliced in 2- to 3-inch lengths
* 1 scant teaspoon Dijon mustard
* 1 1/2 tablespoons white wine vinegar
* salt and pepper, to taste
Asparagus Recipe Instructions:
Cook bacon until crisp; remove to paper towels to drain.
If desired, remove some of the grease from the pan, leaving a tablespoon or two. Add onion and asparagus to the grease left in the pan and saute over medium-low heat until asparagus is just tender. Put in a bowl and toss with the mustard and vinegar. Add salt and pepper, to taste.
The Asparagus Recipe is ready to serves 4 persons...nice ! Enjoy it !
