ASA'S ASPARAGUS

ASA'S ASPARAGUS ...another great asparagus recipe to try....nice one !

INGREDIENTS
  • 2-2 1/2 lb. asparagus
  • Boiling water
  • 1 1/2 tsp. salt
  • Hollister Hollandaise (recipe)

INSTRUCTIONS
Cut off the tough ends of the asparagus and scrub well. Scrape the skin and scales from the stalks.
Bunch the stalks together and tie with string. Place upright in a deep saucepan and add boiling water to a depth of about 2 inches. Add salt. Bring the mixture to a boil, cover and cook for 15-20 minutes.

Pierce the lower part of the stalks with a fork to test tenderness. Do not overcook. Drain well. Arrange the asparagus in a serving dish and drizzle with Hollister Hollandaise. This great asparagus recipe serves 4-6 great persons. Nice taste...enjoy !

ARTICHOKE ASPARAGUS SOUP

ARTICHOKE ASPARAGUS SOUP ....try this great asparagus recipe...nice one !

INGREDIENTS
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 1/2 tsp. minced garlic
  • 1 c. water
  • 1 chicken bouillon cube
  • 1 can cream of chicken soup
  • 1/2 soup can water
  • 2 cans asparagus (cut into 1-1 1/2")
  • 1 can artichoke hearts, cut into pieces
  • 1 c. cream or milk
  • Parmesan cheese

INSTRUCTIONS
Melt butter over low heat. Add flour and make a smooth paste. Add garlic and 1 cup water. Cook until bubbly. Add the soup, 1/2 can of water and bouillon cube. Add the asparagus and
artichokes, including the liquid. Cook over low heat.
Just before serving, add the cream. Heat this through. Do not boil. Season with salt, pepper and a little creole seasoning.
After serving sprinkle each bowl with Parmesan cheese. Garnish with boiled finely chopped egg if desired. The asparagus recipe of soup is ready to serve....enjoy it !

ALPINE ASPARAGUS QUICHE

ALPINE ASPARAGUS QUICHE ...another great asparagus recipe to try ! Great !

INGREDIENTS
  • 1 unbaked 9 inch pie shell
  • 1 pkg. (10 oz.) asparagus
  • 1/2 c. finely chopped onion
  • 1/4 tsp. nutmeg
  • 3 eggs, slightly beaten
  • 3/4 c. milk
  • 3/4 c. half and half
  • 1 tsp. salt
  • Dash of pepper
  • 1 c. shredded Swiss cheese

INSTRUCTIONS
Bake pie shell at 400 degrees for 8 to 10 minutes. Cook asparagus, drain. Combine milk, cream, onion, salt, nutmeg and pepper in a saucepan. Bring to a boil, then simmer 1 minute.

Stir hot mix into eggs. Sprinkle 2/3 of cheese into pie shell.
Arrange asparagus over cheese, trimming spears if necessary.
Pour in egg mix. Sprinkle remaining cheese over top. Bake at 375 degrees for 20 to 25 minutes or until silver knife inserted 1 inch from center comes out clean. The asparagus recipe of quiche is ready to serves 6 great persons. Enjoy the appetizer ! Nice !

INGREDIENTS
  • 2 (10 oz.) pkgs. frozen cut-up asparagus, thawed
  • 1/2 c. toasted slivered almonds
  • 1/2 tsp. salt
  • Dash of pepper
  • 2 c. Rich Cheese Sauce
  • 1 c. cracker crumbs

INSTRUCTIONS
Heat oven to 350 degrees (moderate). Put one half of asparagus in 2-quart baking dish. Top with half the amounts of remaining ingredients. Cover with rest of asparagus and top with rest of ingredients. Bake 40-45 minutes. The asparagus recipe is ready to serve.....enjoy it !

ZUCCHINI AND ASPARAGUS CASSEROLE

ZUCCHINI AND ASPARAGUS CASSEROLE ...try this nice asparagus recipe....A great one !

INGREDIENTS FOR THIS ASPARAGUS RECIPE :
  • 1 medium zucchini
  • 1 8 oz. pack Kraft Monterey Jack Cheese, shredded
  • 1 can Campbell's Cream of Asparagus soup, undiluted
  • 1/2 cup UNCLE BEN'S® rice, partially cooked and drained
  • small amount fresh onion and/or garlic (or onion and garlic salt)
  • salt and pepper
  • parsley flakes
  • sweet basil flakes

INSTRUCTION FOR THIS ASPARAGUS RECIPE :
Preheat oven to 350°F.

Peel, remove seeds, and dice zucchini to bitesize pieces. Mix all of the above ingredients in a casserole dish seasoning with salt, pepper, basil, parsley, garlic and onion as desired (or to taste).
Bake for 35-40 minutes.

CHICKEN STRUDEL WITH ASPARAGUS AND PROSCUITTO

CHICKEN STRUDEL WITH ASPARAGUS AND PROSCUITTO ...a nice asparagus recipe...try this one !

INGREDIENTS
  • 1 cooked chicken, shredded
  • 3 cups cheese, grated
  • spring onions, chopped small
  • 8 mushrooms, chopped
  • 1 small onion, diced
  • 3 cloves garlic, crushed
  • 2 rashers prosciutto (or bacon)
  • cracked black pepper, to taste
  • ½ tsp salt
  • pinch of cinnamon, cumin and chili powder
  • 1 tin asparagus spears
  • 1 puff pastry sheet per person
  • sesame seeds
INSTRUCTIONS
Place first nine ingredients in bowl and mix with hands.Brush edge of pastry sheets with milk and place mixture in middle.

Add ¼ of the asparagus spears to each mixFold over sides and ends to make a parcel. Turn over and make a couple of slits in top to release air, brush with butter, sprinkle with sesame seeds and cook in hot oven until brown.Serve with roast potatoes and salad. The Asparagus recipe is ready to serve...enjoy it !

ASPARAGUS BUNDLES

ASPARAGUS BUNDLES
A nice asparagus recipe to try !
INGREDIENTS
  • 1 bar cream cheese
  • 1/2 pound Proscuitto (thinly sliced)
  • 1 lb asparagus
  • Parmesan cheese
  • cooking spray (Pam)

INSTRUCTIONS
Preheat oven to 375°F.

Simmer asparagus for about 8-10 minutes depending on size; drain and let cool.
Lay out slice of Proscuitto and place about 3-4 asparagus in center; top asparagus with a tablespoon of cream cheese. Wrap Proscuitto around asparagus and crame cheese.
Repeat for desired quantity of servings. Place on greased cookie sheet. Spray tops of bundles with cooking spray.
Sprinkle with Parmesan cheese and bake for approximately 12-15 minutes. The asparagus recipe is ready to serve...great !
